Andrew McKay has been baking these cookies for nearly twenty years, first for friends and family, and now for his kids too. They’re soft, chewy, and absolutely delicious — the kind of cookie that disappears as soon as it hits the plate.
Ingredients
- ½ cup butter
- ½ cup light brown sugar
- ¼ cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ¼ teaspoon baking soda
- 1 teaspoon salt
- 1½ cups quick-cooking oats
- ½ cup semisweet or milk chocolate chips
- ½ cup peanut butter chips
- ⅔ cup chopped walnuts
Instructions
- In a large bowl, whisk butter and sugars until smooth.
- Beat in the egg, then stir in vanilla.
- In a separate bowl, combine flour, baking soda, and salt.
- Add dry ingredients to the wet mixture and blend.
- Stir in oats, chocolate chips, and walnuts.
- Drop spoonfuls onto an ungreased baking sheet.
- Bake for 12 minutes, or until lightly golden around the edges.
- Let cool for 5 minutes on the baking sheet before transferring to a wire rack.
